Heatherslaw's Banana Bread

A perfect way to use up your over-ripe bananas, this loaf is delicious with a cup of tea - or try it warm with a scoop of icecream or some creamy custard.










  • 225g (8oz) Heatherslaw White Wheat Flour
  • 2 ripe bananas
  • 175g (6oz) butter or margarine
  • 175g (6oz) caster sugar
  • 3 eggs
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon vanilla essence
  • ½ teaspoon ground cinnamon

Preheat the oven to 180oC


  1. Peel the bananas and mash them with a fork
  2. Mix together the butter and sugar
  3. Add the eggs, flour and baking powder and stir in gently
  4. Gently stir in the bananas, vanilla and cinnamon
  5. Pour the mixture into a greased loaf tin
  6. Bake for 1 hour until firm to the touch

Leave for 5 minutes before turning onto a wire rack to cool
